Brown Butter Chocolate Chip Cookies

The extra five minutes of browning the butter is the whole point. It turns a familiar cookie into the one everyone asks you to make again.

Pull them when the centers still look a little underdone. The tray is part of the bake.

The recipe

Ingredients

  • ¾ cup unsalted butter
  • 1 cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg plus 1 yolk
  • 1¾ cups flour
  • 1 tsp baking soda
  • 1½ cups chopped dark chocolate

Method

  1. 01Brown butter until amber and nutty. Pour into a bowl and cool for 10 minutes.
  2. 02Whisk in sugars, egg, yolk, and vanilla. Fold in dry ingredients and chocolate.
  3. 03Scoop, chill for 20 minutes, then bake at 375°F for 10–12 minutes.
